One pot Aaloo bhaji (Potato bhaji)

Potato bhaji / Aloo bhaji is a widely preferred side dish for poori and chapati. Here is the recipe of one pot method of bhaji

Preparation time: 5 minutes

Cooking time: 10 to 15 minutes

Serves : 4

Ingredients:

2 large potato cut into small cubes

1 medium onion, finely chopped

1/2 medium tomato, finely chopped

2 green chilly slitted

5 to 6 curry leaves

1/2 teaspoon mustard seeds

1/2 teaspoon turmeric powder

1/2 tablespoon ginger garlic paste

Method:

In a cooker, heat 1 teaspoon oil, add mustard seeds. While seeds crackle, add curry leaves, onion, green chilly and saute for a minute. Then add ginger garlic paste and saute for few seconds and add tomato, turmeric, salt and saute for few seconds. Then add cubed potatoes and mix well. Add 1/4 cup of water , mix well and close the lid. Keep the flame on high . After 2 whistles switch off the flame. Let the pressure settle and then open the lid.

Garnish with coriander leaves and serve with poori or chapati.
