Here is the recipe for simple paneer pulao cooked in pressure cooker.

Serves : 4
Ingredients :
- 1.5 cup basmati rice, wash and soak the rice for 20 minutes
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- whole garam masala , 1 cinnamon stick, 1 star anise, 4 cardamom, 1 bay leaf, 4 pepper corns
- 1 teaspoon ginger garlic paste
- 1 green chilly
- 1/4 teaspoon of turmeric powder
- 1/2 teaspoon chilly powder
- 200 gms paneer
Method:
- Heat 2 tablespoons of ghee in a pressure cooker, add all whole garam masala, saute for a minute.
- Then add onion, saute till light brown.
- Add ginger garlic paste, saute for 2 minutes, add tomatoes, green chilly , saute for another 2 minutes, add turmeric powder, red chilly powder, paneer and saute for a minute.
- Add soaked rice, saute for a minute, and add 2.75 cups of water, salt and mix little and close the lid and Cook on high whistle.
- After 1 whistle, switch off the flame, let the pressure settle and then only open the lid.
- Serve the paneer pulao with raita and pickle.
Note:
- Jeera rice can be used instead of basmati rice.
- Do not soak jeera rice.
- For 1 cup of jeera rice, add 1.5 cups of water.
