Cashew pulao / Kaju pulao

This is yet another one pot rice dish which is simple and delicious. As the name suggests, the main ingredient here is cashew nuts. Cashew nuts impart a unique flavor to the pulao. It can be accompanied with any veg or non veg gravy , raita , pappad , pickle.

You may like any of these gravy with the pulao –

Ingredients:

  1. Basmati rice – 2.5 cups
  2. cashew nuts – 100 gms
  3. ghee – 2 tablespoon
  4. cinnamon – 1 inch
  5. cardamom- 3
  6. bay leaf – 1
  7. cumin seeds – 1/2 teaspoon
  8. cloves – 4
  9. onions – 2 medium (sliced)
  10. green chilli – 2 (slitted)
  11. ginger-garlic paste – 1 teaspoon
  12. salt

Method :

Step 1 : Clean the rice well. Soak for about 30 minutes. Drain it and keep it aside.

Step 2 : Heat ghee in a large pot or pressure cooker. Add whole spices – cinnamon , cardamom, bay leaf, cloves, cumin seeds. saute for a minute. Then add the cashews. Saute until cashews turn nice golden.

Step 3 : Then add onions and saute till translucent. Add ginger-garlic paste, green chillies and salt. saute until raw smell disappears.

Step 4 : Add drained rice . Give it a good mix.

Step 5 : Add 6 cups of water (5 and 3/4 cups if using pressure cooker). Cover and cook on medium heat until all the water dries up . (until 2 whistles if using pressure cooker).

Garnish it with coriander leaves and serve it hot with any gravy. You may even add side dishes like raita and pappad.
