This is another quick recipe for breakfast or evening snack.

Ingredients:
1 cup vermicelli/semiya.
1/2 teaspoon mustard seeds
5 to 6 curry leaves
1 cup finely chopped mixed vegetables of ur choice ( carrot,beans,peas,potato,capsicum)
1/2 medium sized onion finely chopped
1/2 medium sized tomato finely chopped
1/4 teaspoon turmeric powder
1/2 teaspoon chilli powder
salt to taste
few coriander leaves chopped
Method:
Heat 3 cups of water in a deep vessel . When the water starts boiling add vermicelli / semiya . Boil the semiya for few minutes till it gets cooked. Drain the semiya and keep aside in a plate.
Meanwhile, in a pan/kadai heat 1 teaspoon oil, add mustard seeds. After mustard seeds crackle, add curry leaves, onion and saute till translucent. Then add tomato, mixed vegetables, salt, turmeric, chilli powder and mix well. After veggies are cooked, add cooked vermicelli / semiya and mix well gently. Cook over a medium flame for 2 mintes. Garnish with coriander leaves and serve.
