Gobhi paratha is stuffed cauliflower paratha.
Ingredients:
For the dough: 2 cups Wheat flour, water, salt.
In a deep bowl, combine wheat flour with enough water, salt and knead into a soft dough. Apply 1/2 teaspoon oil on dough , cover and keep it for 20 minutes.
For paratha stuffing:
1 cup grated cauliflower
1/2 teaspoon chilly powder
1/2 teaspoon jeera powder
1/4 teaspoon turmeric powder
1/4 teaspoon garam masala powder
1/2 teaspoon dry mango powder
salt to taste
( 1 teaspoon ginger garlic paste, 1 finely chopped green chilly and little finely chopped coriander leaves also can be added to enhance the taste)
Method:
Wash the cauliflower florets. Boil some water, add florets and let it cook for a minute. This is a good process of cleaning the cauliflower for any recipe. Drain the cauliflower and grate them.
Add all spices and salt to the grated cauliflower and mix well.
Make medium dough balls and roll them to small sized thick roti. Keep 1 tablespoon of stuffing in centre and bring together all sides of roti and seal gently. Roll them gently into medium sized paratha.
In a pan, cook the paratha on both sides well on a medium heat. Apply ghee or butter and serve with yoghurt, pickle and onion.
