Veg chinese noodles

Veg Chinese noodles is another indo Chinese dish, which can be consumed for brunch, lunch, dinner , snack.  In this recipe boiled noodles are tossed with stir fried veggies.

Preparation time : 5 minutes

Cooking time : 15 minutes

Serves : 2

Ingredients :

1 tablespoon oil

3 cloves garlic, finely chopped

1 inch ginger, finely chopped

1/2 medium sized onion, thinly sliced

1/2 carrot , julienne cut

3 to 4 beans, thinly sliced

1/2 green capsicum, julienne cut

Few spring onion stem, finely chopped

1/2 tablespoon vinegar

1/2 tablespoon soya sauce

1 tablespoon tomato ketchup

1/2 teaspoon pepper

salt to taste

1 packet noodles

Method :

Cook the noodles in boiling water , as per the instruction in noodles packet or till its cooked.

Heat the wok, add 1 tablespoon oil, add ginger and garlic and saute on high flame. Then add sliced onion and saute well for few seconds. Then add beans, carrot and saute for a minute.

The veggies should be crunchy so do not cook for long time. Then add capsicum and saute well. Then add soy sauce, vinegar, ketchup, pepper, salt and mix well. Next add cooked noodles and some finely chopped spring onion stem and toss on high flame.

Switch off the flame, garnish the noodles with spring onions and serve it alone or with any Chinese side dish.

Note:

To make it extra spicy  add 1 tablespoon of chilli sauce along with ketchup.
