Cashew Pudding

Cashew nut lovers would lick until the last drop of it!!! It is the easiest pudding recipe that I have tried so far.

Preparation time : 20 minutes

Setting time : 1 hour

Ingredients :

  1. Cashew nut – 2 handful
  2. Fresh/ tin cream – 170 g ( 1 tin )
  3. Condensed milk(milk maid) – 397 g (1 tin )
  4. Whipping cream – 2 sachets
  5. gelatin – 1 sachet
  6. Milk – 1/4 cup

METHOD :

Step 1: Roast Cashew nuts just till the aroma comes. Then powder it and grind it to a smooth paste using milk.

Step 2: Combine Cream , Condensed milk and whipping cream very well.

Step 3:Prepare gelatin as per the instruction in the packet.

Step 4:Now add gelatin and cashew nut mixture to the above cream mixture. Pour it into a pudding dish. Refrigerate for about an hour or until it sets.

Step 5: Garnish it with caramelized and crushed cashews.

Tip : To caramelize cashew – saute a handful of cashew in a heated pan of butter (1 stick). When it turns light brown , add 1 teaspoon sugar. Let it cool. Then either hand crush it or powder it.
