Kushka

This is a variety of rice which can be easily prepared. Kushka rice is nothing but Biryani rice minus the masala. It is decorated with fried onions, coriander-mint leaves; fragranced with colored rose water and made rich in flavor with ghee. It goes very well with chicken/ mutton gravy .Check out Chicken green curry recipe. A fry and raita would complete the meal.

Preparation time : 15 minutes

Cooking time : 30 minutes

Serves : 3-4

Ingredients:

  1. Basmati rice – 3 cups
  2. onions – 2
  3. whole garam masala
  4. mint leaves , coriander leaves
  5. food colour mixed in rose water – 1/4 cup
  6. ghee – 3-4 tablespoon

METHOD :

Step 1: Slice the onions and deep fry it. Keep it ready.

Step 2 :Boil water (enough water as it will be drained off) . Add whole garam masala and salt. When the water starts to boil, add rice. Let it get cooked. Drain off the excess water

Step 3: Now take a sauce pan . Grease the bottom with 1 tablespoon of ghee .Add a little rice .Then top it with little onion, little colored rose water , coriander and mint leaves. Again put another layer of rice and repeat the procedure. Once done, again pour 2-3 tablespoon of  ghee on top. Keep it in dum (in low flame) for 10 minutes.
