Vada pav is another popular street food from Mumbai. This dish consist of deep fried potato dumplings called as batata vada , placed inside the pav bun. Usually accompanied with different chutneys and fried green chilly.
Here I share the recipe of batata vada / potato dumplings.
Prepartion time : 10 minutes
Cook time : 20 minutes
Serves : 4
Ingredients :
1/2 teaspoon mustard seeds
2 -3 curry leaves, finely chopped
1 green chilly, finely chopped
few coriander leaves, finely chopped
1/4 teaspoon turmeric powder
salt to taste
For besan batter :
3/4 cup gram flour
pinch of turmeric powder
pinch of salt
Method :
Boil 1 large potato and mash well and keep aside.
In a pan, heat 1 teaspoon oil, add mustards seeds. Then add chopped curry leaves, green chilly, coriander leaves, turmeric, salt, mashed potato one by one, mix and saute well for a minute. Remove from heat and keep aside.
In a bowl, add besan, turmeric powder, salt and 1/4 cup water and mix well. Check for consistency of batter.
Make potato balls, dip in besan batter and fry in a deep pan till golden brown.
Potato dumpling/ batata vada is ready.
In the same oil fry 4 green cillies for couple of minutes and keep aside.
Next take a pav bun, slightly cut in the middle, apply green chutney and tamarind chutney on both sides of inside part of pav . Then slightly press the batata vada and place inside the pav along with fried onion.
Serve vada pav with Green chutney and tamarind chutney.
