Veg mixed poriyal

Its a  quick recipe of carrot, cabbage, beans mixed poriyal which is crispy n tasty , can have along with rice and chapatti too.

Preparation time: 5 minutes

Cook time : 5 minutes

Serves : 3

Ingrediants:

1/ 2 small sized onion, finely chopped

1/2 cup of each carrot, beans, cabbage, finely chopped

1 teaspoon oil

1/4 teaspoon jeera

1/4 teaspoon mustard seeds

1 green chilly, slitted

1 tablespoon freshly grated coconut

salt to taste

Method:

In a small cooker, heat oil, add mustard seeds. When crackles, add jeera seeds and saute for few seconds.

Then add onion and saute for few seconds. Then add all veggies, add salt and green chilly and mix well for few seconds. Next add coconut and 1 tablespoon of water and close the lid.

Cook on high heat for 1 whistle. Switch off the flame and let the pressure settle, then only open the lid.

This method  any liquid would not be there.

But if liquid remains in poriyal then , switch on the flame and cook till liquid gets dried and then serve with rice or chapati.
