Kothu Paratha is a dish originally from South Indian state of Tamil Nadu. It is made using left over paratha cut into strips and combined with spices. It is yet another easy and quick breakfast recipe. Here it is prepared using eggs too.
Preparation time : 15 minutes
Cooking time : 20 minutes
Serves – 3
Ingredients :
- paratha – 3 (cut it into thin strips)
- eggs – 4
- onion – 1 (chopped)
- tomato – 2 (chopped)
- green chilly – 2
- ginger-garlic paste – 1/4 teaspoon
- red chilly powder – 1 teaspoon
- turmeric powder – 1/4 teaspoon
- salt, pepper
- oil , ghee
- coriander leaves – to garnish
Method :
Step 1 : Heat oil in a pan. Add chopped onion and green chillies. Saute till golden brown
Step 2 : Add ginger-garlic paste and tomato. Saute very well. Add chilly powder, turmeric powder and salt. Combine well
Step 3 : Break open eggs to the above mixture . Give it a good mix.
Step 4: Now add the paratha pieces while the eggs are still cooking.
Step 5 : Add pepper powder , 1 teaspoon ghee and saute for about a couple of minutes.
Step 6 : Garnish with coriander leaves.
