Palak Pulao

It is a healthy and delicious dish which can be prepared quickly. A flavorful rice recipe combined with Spinach makes it ideal for a weekday lunch or pack it for your lunchbox. Here it is made minus the veggies. But an addition of your favorite veggies (like potato , carrot or peas) makes it more nutritious and tasty.

Preparation time : 15 minutes

Cooking time : 20 minutes

Ingredients :

  1. rice – 1.5 cups
  2. Spinach – 1 large bunch (washed and chopped coarsely)
  3. Tomato – 1 (cubed)
  4. onion – 1 (sliced)
  5. ghee / oil – 2 teaspoon
  6. jeera – 1/2 teaspoon
  7. whole garam masala
  8. cashew nuts – 10,roasted for garnish (optional)
  9. green chilly – 2(optional)

  To grind :

  1. grated coconut – 1/4 cup
  2. Coriander leaves – 1 bunch
  3. onion – 1
  4. Chilly powder – 1 teaspoon
  5. garam masala – 1 teaspoon
  6. mint leaves and garlic (optional)


Step 1 : Blend together the ingredients to grind to a smooth paste

Step 2: Heat ghee/ oil. Add jeera and whole garam masala.After a while, add onions and saute until lightly brown.Add the tomatoes and green chillies

Step 3 : Add the chopped spinach and mix well. Let it cook for a while.

Step 4 : Then add the ground paste to the spinach mixture and mix well.

Step 5 : Add rice and salt . Combine well.

 Step 6: Then add 3 cups of hot water and cook until the rice is done and water is dried.

Step 7 : Garnish with roasted cashew nuts(optional) and coriander leaves
