A very delicious dish in which mushroom is flavored in spicy- tangy semi dry gravy. A kadai is used for cooking this dish, hence the name Mushroom Kadai. Nevertheless , it can be cooked in any pot or sauce pan; it still tastes delicious. In this recipe, I have used Roasted red masala powder (as kadai masala powder) which is always available in my kitchen . Alternatively , I have also mentioned the spice requirements just enough for this recipe.

Ingredients:
- Mushroom – 250 gms (sliced)
- onion – 1 medium (chopped)
- Tomato – 2 large (pureed)
- ginger-garlic paste – 1 teaspoon
- green capsicum – 1 medium (julienne cut)
- kasuri methi – 1 teaspoon
- turmeric powder – 1/4 teaspoon
- cream – 1 tablespoon
- oil, salt
- Roasted red masala powder(click here to know how to make it)- 1-2 teaspoon
Alternatively, (instead of ingredient no.10) I provide here the spice requirements (kadai masala powder) just enough for this dish –
- red chillies – 3
- coriander seeds – 1 tablespoon
- cumin seeds – 1/2 teaspoon
- black pepper corn – 4
- cloves – 2
- cardamom – 1
- cinnamon – 1/2 inch
- fennel seeds – 1/4 teaspoon
Dry roast all these ingredients till nice aroma comes. Once cooled, grind it into a fine powder. Keep it ready.
Method :
Step 1 : Heat 2-3 tablespoon oil in a kadai. Fry the sliced mushrooms until its edges turn golden brown . Remove the mushroom and keep it aside.
Step 2 : In the same kadai, saute onions until it becomes translucent. Add ginger-garlic paste and saute until the raw smell goes. Add the tomato puree and stir well.After a while, add capsicum. Saute for 3-4 minutes on medium flame.
Step 3 : Add the roasted red masala powder or freshly ground kadai masala powder . Add turmeric powder. Mix well
Step 4 : Add salt and 1/2 cup water. Stir and sim cook the masala on low flame for about 4-5 minutes or until you see oil appearing on the top.
Step 5 : Add the fried mushroom slices. Combine well.
Step 6 : Finally, add cream and kasuri methi. Remove from the flame.
