Red Masala paste

Separate masala pastes for fish and chicken/mutton can be prepared in bulk and stored in refrigerator or freezer( for even longer term) .Thus a lot of time can be saved during this precious month of Ramdan

Fish  masala :-

Ingredients :

  1. Dry Red chillies – 15
  2. Coriander seeds – 2 tablespoon
  3. garlic cloves – 4
  4. tamarind – 1 lemon sized ball
  5. turmeric powder –  1/2 teaspoon
  6. salt

Method :

Grind them all together to a smooth paste  using water as required. You may soak tamarind in warm water to make it softer and thus grinding becomes easier.

Chicken/ Mutton red masala paste :-

Ingredients :

  1. Dry red chillies – 15
  2. coriander seeds – 3 tablespoon
  3. Fennel seeds – 1.5 tablespoon
  4. turmeric powder – 1/2 teaspoon

Method :

Dry roast all the above ingredients (except turmeric powder) until nice aroma of spice releases. Cool it and grind it to a smooth paste using water.
