Chicken Casserole is a comforting casserole dish with layers of chicken pasta and creamy béchamel sauce, topped with shredded mozzarella and cheddar cheese . It is gonna be a sure winner in your house!

Preparation time : 15 minutes
Cook time : 35 minutes
Ingredients:
- Pasta – 1 pkt (300gms)
- Chicken (boneless) – 200 gms
- Onion – 1 big (chopped)
- red/green capsicum – 1 small
- garlic – 3 cloves
- red chilli powder – 1/2 teaspoon
- cumin powder – 1/2 teaspoon
- oregano – 1/2 teaspoon
- onion powder – 1/2 teaspoon
- black pepper powder – 1 teaspoon
- Tomato Ketchup – 1 tablespoon
- Shredded mozzarella-cheddar cheese – 3/4 cup
- salt
- oil
For bechamel sauce :
- butter – 50gm
- maida/ all purpose flour – 50gm
- chicken stock cube(optional) – 1
- milk – 500 ml
- pepper – 1/2 teaspoon
Method :
To make Chicken pasta:
- cut the chicken boneless into cube bite size pieces. Wash and clean well. drain well and keep it aside.
- Heat enough water in a pot. When it boils, season it with salt and a few drops of oil. Cook pasta in it (10-15 minutes.) Drain it and run cold water over it. Keep it aside.
- Meanwhile, Heat oil in a skillet. saute garlic for a minute. then add onions and saute till translucent.Add capsicum.When it turns soft, add chicken pieces and little salt. cook on high flame until it is half cooked.
- Add red chilli powder, cumin powder, onion powder and black pepper powder. Mix well.Cook until chicken is well cooked.
- Now add tomato ketchup. Saute for a while and then add oregano.
- Add cooked pasta to the chicken masala. switch off the flame.
To make béchamel sauce :
- Heat Butter in a pan. when it melts, add maida and cook on low flame for a couple of minutes.
- Add in chicken stock cube. Combine very well. (optional)
- Pour the milk gradually, stirring continuously . (there should be no lumps ).season it with pepper.
- Boil the sauce until the sauce turns thick of required consistency.(not too thick)
To make Chicken Casserole :
- Take a baking tray/casserole. At its base, spread half of the prepared chicken pasta.
- Then pour half of béchamel sauce
- Top it up with shredded mozzarella and cheddar cheese.
- Now add the remaining chicken pasta mix, béchamel sauce and again sprinkle shredded mozzarella and cheddar cheese
- Bake it in a pre-heated oven of 180C for 15 minutes
