Chicken Casserole

Chicken Casserole is a comforting casserole dish with layers of chicken pasta and creamy béchamel sauce, topped with shredded mozzarella and cheddar cheese . It is gonna be a sure winner in your house!

Preparation time : 15 minutes

Cook time : 35 minutes

Ingredients:

  1. Pasta – 1 pkt (300gms)
  2. Chicken (boneless) – 200 gms
  3. Onion – 1 big (chopped)
  4. red/green capsicum – 1 small
  5. garlic – 3 cloves
  6. red chilli powder – 1/2 teaspoon
  7. cumin powder – 1/2 teaspoon
  8. oregano – 1/2 teaspoon
  9. onion powder – 1/2 teaspoon
  10. black pepper powder – 1 teaspoon
  11. Tomato Ketchup – 1 tablespoon
  12. Shredded mozzarella-cheddar cheese – 3/4 cup
  13. salt
  14. oil

For bechamel sauce :

  1. butter – 50gm
  2. maida/ all purpose flour – 50gm
  3. chicken stock cube(optional) – 1
  4. milk – 500 ml
  5. pepper – 1/2 teaspoon

Method :

To make Chicken pasta: 

  1. cut the chicken boneless into cube bite size pieces. Wash and clean well. drain well and keep it aside.
  2. Heat enough water in a pot. When it boils, season it with salt and a few drops of oil. Cook pasta in it (10-15 minutes.) Drain it and run cold water over it. Keep it aside.
  3. Meanwhile, Heat oil in a skillet. saute garlic for a minute. then add onions  and saute till translucent.Add capsicum.When it turns soft, add chicken pieces and little salt. cook on high flame until it is half cooked.
  4. Add red chilli powder, cumin powder, onion powder and black pepper powder. Mix well.Cook until chicken is well cooked.
  5. Now add tomato ketchup. Saute for a while and then add oregano.
  6. Add cooked pasta to the chicken masala. switch off the flame.

To make béchamel sauce : 

  1. Heat Butter in a pan. when it melts, add maida and cook on low flame for a couple of minutes.
  2. Add in chicken stock cube. Combine very well. (optional)
  3. Pour the milk gradually, stirring continuously . (there should be no lumps ).season it with pepper.
  4. Boil the sauce until the sauce turns thick of required consistency.(not too thick)

To make Chicken Casserole :

  1. Take a baking tray/casserole. At its base, spread half of the prepared chicken pasta.
  2. Then pour half of béchamel sauce
  3. Top it up with shredded mozzarella and cheddar cheese.
  4. Now add the remaining chicken pasta mix, béchamel sauce and again sprinkle shredded mozzarella and cheddar cheese
  5. Bake it in a pre-heated oven of 180C for 15 minutes
