Roasted red masala powder

The masala powder is very useful powder in my kitchen . I use it to cook chicken, mutton, chana, mushroom etc. Once roasted and powdered, it has a very good shelf life of upto 6 months (1 year if refrigerated).

Ingredients :

  1. red chilly – 200gms
  2. coriander seeds- 1 cup
  3. jeera – 2.5 tablespoon
  4. fennel seeds – 1/4 cup
  5. elaichi – 12
  6. cinnamon – 2 inch
  7. Pepper – 20
  8. Clove – 15

First roast red chilly. Keep it aside. Then roast all the above ingredients .Once it is cooled, powder them all together. Store it in an air tight container.
