Chicken stock pulao

This is the one pot pulao recipe using chicken stock cubes. Its an easy and quick rice dish. We can also add veggies to this pulao to make it more nutritious. Ideal for lunch box too.

Preparation time: 5 minutes

Cooking time : 20 minutes

Serves : 3

Ingredients :

1 cup jeera rice

( Basmati rice also can be used. wash and soak basmati rice for 30 minutes)

1 medium onion, finely chopped

1 large tomato , ( pureed)

1/2 tablespoon ginger garlic paste

2 chicken stock cubes

2 green chillies ( if required)

salt if required

Method :

Heat 2 tablespoon ghee in a pressure cooker. Add onion, saute till light brown. Then add ginger garlic paste, saute for a minute. Add tomato puree and chicken cubes, saute well for a minute. Add washed and drained jeera rice, mix gently for a minute. Then add 1.5 cups of warm water and mix gently. Check for salt and spice. If required add salt,  green chilly.

Close the lid. Cook on medium heat. After 1 whistle, switch off the flame. let the pressure settle and then only open the lid. Serve the chicken stock pulao with raita.

Note :

Veggies can be added after adding tomato puree.

If using basmati rice, then add 1.75 cups of water for 1 cup of rice.
