Carrot Halwa , also known as ‘Gajar ka halwa’ is one of the most popular sweet dessert puddings originating from Indian subcontinent. As the name suggests, the main ingredient is grated carrots. It is prepared with minimal ingredients and it’s really simple to prepare. All you have to do is sim cook the grated carrot in milk , sweeten it with sugar, flavor with cardamom powder and garnish with chopped nuts. Carrot halwa can be served warm or cold. some even like to have it with vanilla icecream.

Preparation time: 20 minutes
Cooking time :1 hour
Ingredients:
- carrot – 500 gms
- Milk – 750 ml
- Ghee – 2 tablespoon
- sugar – 200 gms
- Almonds – 15-20
- Green cardamom powder/elaichi powder – 1 teaspoon

Method :
1.Peel, wash and grate carrots.
2. Heat ghee in a thick bottomed pan.Add grated carrots and cook on a medium heat for about 8-10 minutes until carrots are soft.

3. Add milk and cardamom powder.Bring to a boil and reduce flame.Cook on a low flame until milk is almost reduced. keep stirring occasionally.


4. Finally, add sugar and cook until dry, stirring constantly. switch off the flame once it is dry and not watery anymore.


The delicious carrot halwa / gajar ka halwa is ready ! Garnish it with sliced almonds. You may serve it warm or cold. Some even like to have it with icecream!
