Broccoli Cream soup

Broccoli is one of the vegetable that should be included in our diet due to its innumerable health benefits. It is rich in dozens of nutrients and also is a very tasty vegetable. One of the ways of using it in our meals is by making soup. Try out this delicious recipe of Broccoli cream soup. I made it plain. You made also add in pieces of chicken or any veggies of your choice.

Preparation time : 15 minutes

Cooking time : 30 minutes

Serves – 3

Ingredients:

  1. Broccoli – 200 to 250 gms
  2. onion – 1 small ; chopped
  3. garlic – 2 cloves ; chopped
  4. Oregano -1/4 teaspoon
  5. water or vegetable stock – 1.5 cups
  6. milk – 1.5 cups
  7. atta – 1 -1/2 tablespoon
  8. Butter – 2 tablespoon
  9. salt, pepper – to taste

Method :

Step 1: Cut the Broccoli into florets.Heat enough water in a pot with 1/4 teaspoon salt. Let it boil vigorously. Switch off the flame and add the florets.Remove the florets after 20 seconds and drain.

Step 2: Heat Butter in a sauce pan. Add onion and garlic .Saute till it softens.Add flour.Stir and saute for 2 minutes on a low flame. Add the drained broccoli. Stir and add water or stock.Cover the pan and cook for 6-7 minutes. Switch off the flame.Let it cool.

Step 3: In the mean time, heat milk till warm (do not boil). when the above soup mixture is cooled, blend it till smooth.Add the pureed soup mixture and milk back to the pan and heat by stirring occasionally. No need to bring it to a boil. Season with oregano ,salt and pepper.
