Green Masala

It is much easier to prepare a meal when the masala is ready and easily available. This green masala, once prepared can be used to prepare a variety of dishes. It can be kept in refrigerator for upto 3 weeks or in freezer for uptown 3 months.

Ingredients :

  1. Green Chillies –  20-25
  2. Garlic – 2-3 pods
  3. Ginger – 1 big piece
  4. Whole coriander – 2 tablespoon
  5. Fennel seeds – 1 tablespoon
  6. Jeera – 1/2 tablespoon
  7. Shah jeera – 1 teaspoon
  8. cardamom – 1-2
  9. cinnamon stick – 2
  10. Cloves – 4-5
  11. Turmeric powder – 1 teaspoon
  12. Black Peppercorns – 10
  13. Coriander leaves – a handful

Method : 

Roast coriander , fennel seeds, jeera , shahi jeera , cardomom , cinnamon stick, cloves and peppercorn in a frying pan lightly (in low flame). Let it cool.

Grind it along with all the remaining ingredients.

Transfer it into a air-tight container and store it in refrigerator or freezer.
