Crispy Veg Balls

A very delicious snack that can also be used as a side dish.Crispy vegetable balls are made using potato and carrot as main ingredients. Crumbs of cornflakes make it crispy !!! Kids would love to have it for tiffin.

Preparation time : 20 minutes

Cooking time : 25 minutes

Ingredients :

  1. potato – 2 medium
  2. carrot – 1 (grated)
  3. onion – 1
  4. bread crumbs – 2-3 tablespoon
  5. green chilly – 1 (or according to your spice level)
  6. coriander leaves – 2 tablespoon
  7. lemon juice – 1 tablespoon
  8. cornflour – 2-3 tablespoon
  9. cornflakes – as required
  10. pepper powder , salt
  11. oil

Method :
Step 1 : Peel and pressure cook the potatoes for 2 whistles. Once cooled, mash the potatoes well.
Step 2 : In a mixing bowl, add mashed potatoes , grated carrot, chopped onion,bread crumbs , green chilly , coriander leaves, pepper powder, salt and lemon juice. Combine very well. Make lemon sized balls out of it.
Step 3 : In a small bowl, mix cornflour in 1/4 cup water. Crush the cornflakes into crumb pieces.
Step 4 : Dip each veg ball into cornflour mix first and then roll it over cornflake crumbs.
Step 5: Deep fry the veg balls. Alternatively , the veg balls can be fried in a paniyaram pan (there by requiring less oil).
