Vegetable Poha

A simple and healthy breakfast which can be prepared in few minutes and can be served at snack time too. The rice flakes/ beaten rice can be cooked with just onion or just with potato. Here I have used mixed veggies to make it even more nutritious. Kids will relish it in lunch box.

Preparation time : 2 minutes

Cooking time : 10 minutes

Serves : 2

Ingredients :

Rice flakes/ Poha – 1 cup

oil – 1 teaspoon

Peanuts- 1 tablespoon

Mustard seeds – 1/2 teaspoon

Cumin seeds- 1/2 teaspoon

Hing – a pinch

Curry leaves – few

Onion – 1 small, finely chopped

Mixed vegetables – 1 CUP (carrots, beans, potato etc)

Green chilly – 1 or 2, slit

Turmeric powder – a pinch

salt – to taste

Lime – 1/2 , juice

Coriander leaves – few to garnish

Method:

Wash the poha and keep aside.

Heat oil in a pan/kadai , add peanuts and roast them on low flame, for couple of minutes, remove and keep aside.

In the same pan add curry leaves and onion, saute till it turns translucent, then add all veggies, salt, green chilly and turmeric powder. Mix well and close the lid for 5 minutes. When the veggies are cooked well, add the washed poha and mix well. Close the lid and simmer for 2 minutes. Add lime juice, roasted peanuts, coriander leaves and mix well.

Vegetable poha is ready to serve.

Poha can be garnished with sev and serve to kids.

Note :

If poha / rice flakes are thick then Wash and soak the poha for 5- 10 minutes till it turns soft.

Its ideal for kids lunch box too. Serve their favourite veggies or fruits along with some home made Chocolate barfi in their lunch box.
