Mutabbaq or Martabak

Mutabbaq or Martabak is a Saudi traditional street food. Its very simple, easy recipe . Its kind of Indian stuffed bread. My recipe has a twist. I used the store bought mutabbaq leaves. and filling recipe is not traditional. I have given Indian touch to them 🙂 Its best for breakfsts, lunch box , snack time as well ifthar.

Traditionally this dish is prepared by kneading dough using all purpose flour, then cooking minced meat, cool them and add egg , then fill in the thinly spread bread and cook on a pan. Will post this traditional method too, next time.

Preparation time : 10 minutes

Cooking time : 20 minutes

Ingredients :

Chicken – 500 gms, boneless , minced

Onion – 2 large. finely chopped

Carrots, beans – 1/2 cup, finely chopped ( optional)

Ginger garlic paste – 1 teaspoon

Turmeric powder – 1/4 th teaspoon

Garam masala powder – 1/2 teaspoon

Pepper powder- 1 teaspoon

Coriander leaves – few, finely chopped

Eggs – 3

Salt – to taste

Mutabbaq leaves/ spring roll leaves – 8

Butter – 4 tablespoon

All purpose flour – 2 tablespoon ( to make glue)

Method :

Heat a pan, add 1 tablespoon of oil, add finely chopped onion and saute till soft. Add ginger garlic paste. Saute till raw smell goes. then add veggies (optional), minced chicken, salt, pepper, garam masala powder, turmeric and saute well. Close the lid and cook chicken till done. Do not add water, as chicken leaves its moisture. Switch off the flame. Let the masala cool down and keep aside. ( Make sure its completely cooled down)

Note : If you already have any samosa masala filling , then can use it instead of preparing the above filling.

In a bowl, whisk eggs, add little salt, pepper, coriander leaves, cooled chicken masala and mix well.

In a small bowl, add little water to all purpose flour and mix well to form a thick lump free paste just like how you do for samosa.

Note: You can prepare the mutabbaq sheets by kneading all purpose flour, salt and oil to form a soft dough. Then roll thin breads of this dough like chapati and place the filling in middle, fold the sides to form a square shape.

Take a mutabbaq/ or spring roll sheet. place the egg mix on the sheet in square shape. Apply the all purpose flour paste on the all the sides . place another sheet on them and press it on the sides.

Grease some butter on the heated pan, cook the mutabbaq on both sides till light brown.

Cut them into smaller squares.

Chicken mutabbaq is ready to serve. You can prepare the filling with any meat.

Cheesy chicken balls

Here is one more delicious chicken snack recipe. The masala is same as of Chicken cutlet. Adding shredded mozzarella cheese to these , makes it even more delicious.

Even these can be freezed upto a month just like Chicken fingers, Chicken cutlet .

Preparation time : 10 minutes

Cooking time : 20 minutes

Serves : 25 cheese chicken balls

Ingredients :

Boneless chicken – 500 gms

Salt – salt to taste ( to cook chicken and to prepare masala)

Turmeric – a pinch

Onion- 1 large, finely chopped

Ginger garlic green chilly paste – 1 teaspoon

Pepper powder -1/2 teaspoon

Garam masala powder – 1/2 teaspoon

Coriander leaves – few, finely chopped

Lime juice – of 1/2 lime

Potato – 1 large

Mozarella cheese – 1/2 cup, shredded ( or as per your wish)

For coating :

Maida ( all purpose flour ) – 1 cup

Egg – 2

Breadcrumbs – 1.5 cups

Salt – a pinch

Method :

Wash and clean the chicken. Add salt, turmeric powder and cook the chicken. Shred them and keep aside.

Boil the potatoes.

In a fry pan, heat 2 tablespoons of oil. Saute onion till they turn translucent. Then add ginger garlic green chilly paste. ( You can also add 2 finely chopped green chilles and 1 teaspoon ginger garlic paste) . Saute till the raw smell disappears.

Then add pepper powder, garam masala powder and saute for a minute. then add the shredded chicken and salt. Add finely chopped coriander leaves and lime juice. Mix very well and switch off the flame.

In a large bowl, mash the boiled potatoes very well. add the chicken masala and mozzarella cheese. Mix well.

Apply oil on the palm and make small balls.

Whisk eggs in a bowl . Keep breadcrumbs in another bowl . Take maida in a bowl and add a pinch of salt and mix well.

Coat the chicken balls in the maida , then dip in the egg, then coat well with breadcrumbs. Follow this step for all the chicken balls.

Deep fry these chicken balls on medium heat till they turn golden brown.

You can even cook these in the paniyaram pan. Add little oil to the paniaram pan and cook these balls on low to medium heat. turn them ocassionally till all sides turns golden brown.

Enjoy these cheesy chicken balls with your favorite dips. 🙂

Chicken cutlet

One of the most liked snacks in the holy month of ramadan. Deep fry it or shallow fry , its just delicious. I have used fresh boneless chicken here and cooked, then shredded and prepared cutlet. I usually prepare cutlets if any chicken is leftover from curry or starters.

Couple of days before ramadan, I prepare these cutlets uncooked beforehand and freeze it. I have shared Chicken fingers recipe, which can be freezed too. Will update with many more such freezable recipes.

Preparation time : 10 minutes

Cooking time : 25 minutes ( if you already have cooked chicken then cooking time is 15 minutes)

Serves : 15 – 18 medium cutlets

Ingredients :

Boneless chicken – 500 gms

Salt – to taste

Turmeric powder – a pinch

Onion – 1 large, finely chopped

Green chilly – 2 , finely chopped

Ginger garlic paste – 1 teaspoon

Pepper powder – 1/2 teaspoon

Garam masala powder – 1/2 teaspoon

Red chilly powder – 1/2 teaspoon ( optional if you want spicy cutlets)

Coriander leaves – few, finely chopped

Lime juice – of 1/2 lime

Potato – 1 , large , to be boiled

For coating :

Egg – 2

Breadcrums – 1.5 cups

Method :

Wash and clean the chicken. Cook it in a cooker adding little salt and turmeric powder. Shred the cooked chicken and keep aside.

Boil the potatoes.

In a fry pan, heat 2 tablespoon oil and saute onion till they turn translucent. Then add ginger garlic paste, green chilly and saute till raw smell disappears. Then add pepper powder, garam masala powder, red chilly powder and saute for a minute. Add cooked chicken and mix well. Then add the chopped coriander, lime juice, mix well and switch off the flame.

In a large bowl, mash the boiled potatoes very well. add the chicken masala . Mix well.

You can also use the same masala for making bread rolls, cheesy chicken balls etc.

Apply some oil on the palm, and make cutlets.

Whisk eggs in a bowl and keep. In another bowl, keep breadcrumbs.

Dip the cutlets in the egg , then coat well with breadcrumbs. Follow this step for all the cutlets.

Heat 3 tablespoon of oil in a pan. Shallow fry the coated cutlets on low to medium flame till both sides turns golden brown.

Enjoy these hot chicken cutlets with your favorite dips.

Note:

To make the cutlets more nutritious , add finely chopped veggies like beans, carrots , cauliflower after adding ginger garlic paste. Let it cook for few minutes till veggies gets half cooked, then add masalas and chicken.

Chicken fingers

Chicken fingers is finger shaped chicken nuggets. The same can be prepared in any desired shape, the recipe remains the same. Kids and elders all love to have these as snacks at home, lunch box or even for picnics. Its simple and easy to prepare, add your favorite spices according to your taste.  You can even add some shredded mozzarella cheese while mixing to prepare these fingers to make it cheesy chicken fingers. Kids love it.

Its best for ifthar too because you can prepare this raw chicken fingers and freeze it up to a month.

Preparation time : 10 minutes

Cooking time : 10 minutes

Serves : 25 pieces

Ingredients :

Boneless chicken – 500 gms ( or minced chicken)

Ginger garlic paste – 1 teaspoon

Pepper powder – 1 teaspoon

Garam masala powder – 1/2 teaspoon

Chilli flakes – 1 teaspoon ( optional if you want to make it spicy)

Cornflour – 2 teaspoons

Salt –  to taste

For coating :  

Maida – 1 cup or more

Salt – a pinch

Pepper – 1/4 th teaspoon ( optional)

Egg – 2

Breadcrumbs –  a big bowl

Method : 

Clean  and pat dry the boneless chicken. Mince it in the blender .

In a bowl , add minced chicken, ginger garlic paste, garam masala powder, pepper powder, chilly flakes, cornflour and mix well. knead it like dough.

To prepare cheesy chicken fingers,  add shredded mozzarella cheese, while mixing.

Apply little oil on both palms and make finger like shape from the chicken mix.

In a bowl, add maida, salt, pepper and mix well.

In another bowl, break open the eggs and whisk well and keep.

In another bowl, add breadcrumbs.

Dip the chicken fingers in the maida mix and coat well. then dip well in the egg. Then coat well with bread crumbs. Follow this for all the fingers.

At this point you can put these in a zip bag or freezer safe boxes and freeze it for a month.

Deep fry these fingers in a low-medium heat. occasionally turn them. When it turns golden brown, remove it from the heat.

Serve these yummy chicken fingers with ketchup .

Potato Pola

Potato pola can be called Potato pizza . In this, grated potatoes are used as base; topped it with masala and mozeralle cheese. I have made plain masala with just onions and tomatoes. chicken or veggies of your choice can be added. Its perfect for evening snack, for iftar etc.

Preparation time : 10 minutes

cooking time : 30 minutes

Ingredients :

  1. Potato – 2 medium (grated)
  2. onion – 1 (chopped)
  3. Tomato – 1 (chopped)
  4. ginger -garlic paste – 1/2 teaspoon
  5. chilli powder – 1/2 teaspoon
  6. coriander powder – 1/2 teaspoon
  7. turmeric powder – 1/4 teaspoon
  8. garam masala powder – 1/4 teaspoon
  9. maida – 2 tablespoon
  10. cornflour – 1 teaspoon
  11. capsicum – 1/4 (green/orange)
  12. mozzarella cheese – a handful
  13. oregano – a little
  14. egg – 3
  15. paprika powder – 1/2 teaspoon
  16. salt, pepper
  17. oil

Method :

For the base:

Peel and grate the potatoes (uncooked) . Transfer it to a bowl. add maida . Season with pepper and salt. Combine well. Then add cornflour . Mix it very well. Set aside. –

  To make masala :

Step 1 : Heat 2 tablespoon oil in a pan, saute onion until it turns translucent. add ginger-garlic paste. saute until raw smell disappears. then add tomato and cook till it turns soft and mushy.

Step 2 : Add in chilli powder, coriander powder , turmeric powder, garam masala powder and salt. Mix it very well. Switch off after a couple of minutes. Set aside.

For the topping :

Step 1 : break open 3 eggs into a bowl. Season it with salt, pepper and paprika powder. whisk it well.  Set aside.

Step 2 : cut the bell peppers/ capsicum of your choice into square or julienne cut.

Assembling :

Step 1 : Heat 2 tablespoon oil in a pan. Spread the prepared potato batter evenly and thinly . Cover and cook in medium flame.  After 5 minutes, flip it over.

Step 2 : Spread the prepared masala evenly on top.

Step 3 : Pour the egg to cover the entire pola .

Step 4 : decorate with cut capsicum pieces, sprinkle mozzarella cheese and oregano. Cover and cook for 10 minutes on medium to low flame .

Note : shredded chicken pieces can be added while making masala.

Chicken shawarma

Shawarma is the most popular food of middle east. This is my way of preparing chicken shawarma at home. Chicken is marinated in few spices, either baked, oven grilled or pan grilled and cut into thin strips, placed inside the arabic bread along with veggies and tahini sauce to get the delicious shawarma at home.

I prefer to use yoghurt cream sauce instead of tahini , as my family prefers now. Thanks to food blogger Liba for this sauce recipe.

If planned ahead, then you can add this recipe to your get togethers or picnic menu. Its easy, quick and also delicious too. Do try this simple recipe and enjoy with your family and friends.

Preparation time : 30 minutes

Cooking time : 15 minutes

Serves : 8 shawarmas

Ingredients :

Arabic bread – 8 , small

Lettuce – few, thinly chopped

Tomatoes – 1 big. thinly sliced

Pickled cucumbers, jalapeños- few

Chicken- 500 gms, breast or thigh piece
For marination :

Red chilly powder – 1 teaspoon

Pepper powder – 1/2 teaspoon

Cumin powder – 1/2 teaspoon

Garam masala powder – 1/2 teaspoon

Olive oil – 2 teaspoon

Lime – 1 , juice
Yoghurt cream sauce :

Yoghurt – 1/2 cup

Fresh cream – 2 tablespoons

Garlic – 2 cloves

Salt- 1/2 teaspoon

Olive oil – 1 teaspoon

Method :

Wash and clean the chicken pieces and marinate it with all the ingredients mentioned under marination. Keep aside for minimum 30 minutes or upto overnight.

You can also marinate the chicken in baharat mix , which I have used in Chicken machboos recipe. Even this works great.

Pan grill or oven grill the marinated chicken. Cut into thin strips.

Blend all the ingredients mentioned under yoghurt cream sauce to smooth thick sauce. It can be stored in a closed container in refridgerator for 2 days.

Take the arabic bread, place lettuce, tomato, pickled cucumber and jalapeños. Keep few chicken strips on top, pour some sauce.

Roll it and serve with yoghurt cream sauce and pickled veggies as a snack or dinner.
