Fenugreek rice porridge in coconut milk- Metthero kanji

Fenugreek rice porridge in coconut milk which is known as meththero kanji in Beary language. It’s a healthy, simple rice dish made with rice, coconut milk and fenugreek seeds which is called as meththe in Beary. Its especially made during Ramadan , to have after ifthar, but also recommended during post delivery because of its highly nutritional values.

Here is a small description about our beary community. ūüôā

Beary is a community concentrated mostly along the Coastal Dakshina Kannada, Karnataka state, India. It has its own unique traditions and distinct cultural identity.

The language spoken by Bearys is Beary Baashe. The language has high influence by the Arabic and also has words derived from Tulu ( local language of mangalore), Malayalam and Tamil. The beary cuisine is highly influenced by the Southindian cuisine. A few traditional popular dishes are Pinde ( steamed rice dumplings), Syame ( idiyappam), Guliyappa ( paniyaram), Poo-pole( near dosa) etc.

We are called as Bearys ūüôā

Coming back to recipe, thengero kanji is very simple and one pot meal.

Preparation time : 10 minutes

Cooking time : 15 minutes

Serves : 4

Ingredients :

Jeera rice – 1/2 cup

Water- 2 cups

Fenugreek seeds – 1/2 teaspoon

Coconut milk – 1/2 cup , thick

Salt – 1/2 teaspoon

Method :

Soak the fenugreek seeds in water for 10 minutes.

In a cooker, add washed and drained jeera rice, water, fenugreek seeds, salt and cook on medium – high flame for 4-5 whistles. Let the pressure settle. Open the lid and stir the porridge.

Then add coconut milk , let it boil for 5 minutes on low flame.

Serve hot with pickle, vegetable poriyal.

You can also add a teaspoon of ghee to the porridge and stir, before serving to enhance the flavour.

Note:

This porridge can be prepared without fenugreek seeds too. Which is known as “thengero kanji” aka rice porridge in coconut milk. Thenge is coconut in beary. Recipe remains same without fenugreek seeds.

Coffee egg pudding

This pudding is for all the coffee lovers. The aroma and flavour of coffee takes the basic egg pudding to the next level. This delicious pudding needs just 5 ingredients and 15 minutes of cooking. Try it to believe it. ūüôā

Cooking time : 15 minutes

Ingredients :

Milk – 500 ml

Egg – 4 medium

Sugar – 1 cup

Coffee powder – 1 tablespoon

Hot Water – 1 tablespoon

Method:

In a small bowl add coffee powder and hot water. Mix well.

In a blender add milk, eggs, sugar, coffee and blend well.

In a cooker, pour 1 cup of water. Take a steel vessel which can fit inside the cooker. Pour the blended mix into the steel vessel. Keep the vessel inside the cooker and cover the vessel with a lid.

Close the cooker. Switch on the flame. Cook on medium-high heat for 4 whistles. Switch off the flame. Let the pressure settle down. Open the cooker lid.  Open the steel vessel lid. Remove the steel vessel carefully (Vessel will be very hot).

Let it cool down to room temperature. Keep it in the refrigerator.

Keep a plate over vessel and flip. Cut and serve the soft and yummy dessert to your loved ones. Enjoy ūüôā

Strawberry souffle

Strawberry soufflé is a delicious and easy dessert recipe. The creamy yummy dessert is just melts in the mouth. You will surely going to add this in your menu list for party.

Ingredients :

Strawberries – 250 gms

Strawberry jelly – 1 packet

Condensed milk – 1/2 tin

Cream – 1 tin

Method :

Prepare jelly as per the instructions in the packet. Keep it in refrigerator to set.

In a blender, add half of set jelly, condensed milk, cream & 4 strawberries. Blend them smooth.

Chop the remaining strawberries and keep aside.

Scramble the remaining jelly using fork and keep aside.

In a dessert bowls or dish, place the scrambled jelly as the base. Pour the blended mixture over the jelly. Garnish it with chopped strawberries.

Or

place strawberries as the base, pour blended mix over it, garnish with scrambled jelly.

Cover the bowls  or dish. Keep it in the refrigerator to set for an hour.

Serve the souffle and enjoy with your loved ones.

Note :

If strawberries are sour then chop them and soak in sugar syrup.

Prepare sugar syrup by boiling 3 tablespoons of sugar with 1/4 cup of water. After sugar dissolves well, let the syrup boil for another 2 minutes. Cool down and soak the chopped strawberries in it. And use this strawberries to place at the bottom or to garnish.

Pineapple Souffle

Pineapple souffle is a sweet dish or pudding made of pineapple . Whoever tastes this soufflé cannot resist themselves from going for another couple of serves. It is definitely going to satisfy your palate like never before.

Preparation time : 15 minutes

Ingredients :

  1. Tin Pineapple – 1 tin
  2. Pineapple jelly Р1 packet (prepare the jelly  and keep it ready)
  3. condensed milk (milk maid) –¬† 1 tin (397g)
  4. Cream – 1 tin (170g)

Method :

Step 1 : Cut pineapple into small pieces and spread it on a pudding tray.

Step 2 : Divide the prepared jelly into two halves. Blend condensed milk, cream , one half of the jelly and 2-3 slices of pineapple in a blender .  Pour it on to the pudding tray.

Step 3 :  Finally , scramble the remaining half of the jelly with the help of a fork. Decorate the soufflé with the scrambled jelly.

Granola Bar

It is a sweet oat bar. These kind of energy bars are easily available in any¬†store ; but¬†isn’t it better to munch on the homemade bars? It is a perfect energy bar to have immediately after workouts. It can be your breakfast or a snack.

Preparation time : 10 minutes

Cooking time : 15 minutes

Ingredients :

  1. Oats – 1 and 1/2 cup
  2. Almonds – 1 cup (finely chopped)
  3. dates (pitted) – 1 heaping cup
  4. peanut butter – 1/4 cup
  5. Honey – 1/4

Method :

Step 1 : Toast oats and almonds  in an oven at 350 degrees F (176 C)  for 10-15 minutes or until slightly golden colour.

Step 2 : Process the pitted dates in a food processor for about a minute or until it is rolled into a ball.

Step 3: Put oats, almonds and dates in a large mixing bowl.

Step 4: Heat honey and peanut butter in a saucepan in low flame until it gets warm. Pour it over oat mixture and combine well, breaking apart the dates.

Step 5 : Once thoroughly combined, pour it into a baking dish lined with a wax paper (so that the bars can be easily lifted up)

Step 6: Again cover on top with a wax paper .Press down firmly until flattened uniformly. (you may use a drinking glass to press down and pack the bars properly). Refrigerate it for 15-20 minutes to firm up really well.

Step 7 : Cut the bars into small -required sizes and store it in an air-tight container.

This is a minimal ingredient , delicious starter. Kids savour it as it is non-spicy. You can have it with a bowl of your favorite soup (to make it a light meal) or as a side dish for your main course meal.

Preparation time : 10 minutes

Cooking time : 35 minutes

Ingredients :

  1. Chicken boneless – 250 gms (clean and cut into cubes)
  2. yoghurt – 1/2 cup
  3. ginger-garlic paste – 2 teaspoon
  4. Butter – 1 tablespoon
  5. Almond paste – 2 teaspoon

Method :

Step 1 : Marinate chicken cubes with yoghurt ,ginger-garlic paste and salt.

Step 2 : Transfer it into a pan of butter and cook it till half done. Then grill it until fully cooked

Step 3: Make a paste of almond . Toss the grilled chicken and almond paste on tawa on medium flame for 3-4 minutes or until the chicken pieces turn light brown.

Note :

1.Grilling is optional. You can cook on gas stove. But grilling gives it a better texture.

2.soak 6-7 almonds in water and then make a fine paste .

3.You can add pepper powder while marinating to make it little spicy.
